I find that one of the key pieces is taking the chicken breast, and cutting it depth wise so you basically have two very thin pieces. Then, you lay plastic wrap over it and pound it with a meat pounder or a rolling pin. That way they will be extra thin and be super easy to roll and they don't require the toothpicks.
