You know the one I'm talking about, right?
Yea, it's been floating around my board like crazy, and I had to give a whirl myself.
The recipe - salad and dressing - call for the following ingredients.
For the Dressing:
- 1 garlic clove
- 1/2 cup mayonnaise or vegan mayonnaise
- 1 tsp dijon mustard
- 3 tablespoons lemon juice
- 1 tsp worcestershire sauce
- 1/4 cup freshly grated parmesan cheese
- 3-4 tablespoons olive oil
- 1-2 teaspoons of water to thin if necessary
- salt and pepper to taste
For the Garbanzo Beans:
- 1 15oz can garbanzo beans
- 1 1/2 teaspoons olive oil
- salt and pepper
For the Salad:
- 1 head lacianto kale
- 1/2 cup grated parmesan cheese
- Caesar dressing
- crispy garbanzo beans
- **I added chicken (cooked from the night before) and cherry tomato's
1. Preheat oven to 350
2. Drain garbanzo beans and pat dry. Lay in a baking dish and remove the flimsy skin with your finger tips. (this takes 10 minutes). Then bake beans for 30-40 minutes, or until crispy.
3. While the beans bake, prepare dressing. In a blender - combine dressing ingredients (except water, salt, and pepper). Mix. Add 1-2tsp of water to thin, then salt and pepper to taste.
4. Prepare kale, and extra add-on's
5. Combine everything, toss with homemade dressing, and enjoy
Another Pintrest win for us!
Our local store sells dried (baked to dehydrate) garbanzos and they're freaking addicting!!! I throw those on salads on the regular. I make a really lazy version of this salad - kale + LF ceasar dressing :) Looks delicious!
ReplyDeleteThis looks good. I find kale has a fairly bitter taste but the dressing likely offsets it.
