Weeknight Dinner Round Up

Here is last weeks dinner round up. I'm glad we had a pretty healthy week, because we totally went bonkers eating this past weekend.


Monday: Chicken Kale Ceaser Salad


I make this a lot, and I did it on Monday so that I could make a ton of quinoa to use for the week. I often end up throwing whatever we have in this salad (this week I had craisns and carrots)


Tuesday: Mushroom & Cauliflower Quiona Salad

This was Joel's favorite of the week. I served over a bed of arugula and added chicken (I had made extra on Monday). 

 
Wednesday: Stuffed Pepper Bowls

I follow the linked recipe, but then I don't stuff peppers. I end up putting the mix into a large baking dish (9x13), top it with shredded cheese and cilantro, and bake for 25 minutes at 350. I don't love peppers, so I turned it more into a casserole.

 
Thursday: Cabernet Burgers 

My favorite of the week, and a real treat since I very rarely use ground beef during the week.
  

 I spent some time this morning meal planning for this week, so I should be back again next week with a few other meal ideas. I also took a picture of my receipt, because I'm curious how much groceries run most households. More on that later!

  1. Thanks for sharing these recipes! I think I might have to try out the first two at least! I'm always curious about what groceries cost. I feel like I spend too much, but I'm not sure why because it isn't like we are eating lobster and caviar! One friend said that she could get by on $30 a week. I could do that when it was just me and I was basically eating mac and cheese!

  2. Love these recipes. I wish Kevin would eat quinoa. Too out of the box for him ahhh!!

    I can't wait for your post on how much groceries cost. Kevin thinks I spend $1,000 a month at Harris Teeter and that's not anywhere close to being true. I think it's more like $400-500 which isn't terrible I don't think. Anxious to hear your thoughts.

  4. These all look delicious! Those Cabernet Burgers = YUM. Definitely adding that to my long list of recipes to make! What's your go-to grocery store out there? I think I need to start going to Trader Joe's more.

  5. These recipes look SO good! I love a good salad when the weather starts heating up.

    As for the grocery bill... UGH. I shop at a mix of Aldi's/Costco/Whole Foods/Kroger, depending on what I need and how lazy I feel. (WF is the closest store to our house, and at 5pm on a Friday, I don't feel like going out of my way to save a couple bucks.) I'd say for a fam of 4 (with 10 & 12 year old kiddos), we spend an average of $450/month for groceries, and we live in Memphis, which has a SUPER low cost of living.
