Dinner Time: Spaghetti Squash Primavera

SkinnyTaste.com is my go-to for easy and healthy recipes and Gina's latest concoction is no different. 

I cook with Spaghetti squash almost once a week. Some of my friends are intimatted by it - or not interested in it - but it's super easy to work with and is the closest pasta-like option you can get for a fraction of the calories.

I used this recipe and made some of my own adjustments

The goods (that I used)
1 small spaghetti squash
1 tsp olive oil
1 clove garlic, crushed
1/4 cup red onion, diced
1/2 cup celery, diced
1/2 cup carrots, diced
1 cup broccoli florets
1/2 cup diced zucchini
2 cups tomato basil/marinara sauce
grated Romano
shredded fresh mozzarella


Directions:

1. Pre-heat over to 400 degrees
2. Poke 15 holes in the squash and place in microwave for 6-8 minutes

3. Over medium heat, mix onions, garlic, red onion, celery and carrots - cook for 5 minutes, stirring
 
 4. Add broccoli and zucchini and season with salt and pepper
5. Add the marinara sauce and simmer for 5 minutes
 6. Fork the spagetti squash to create noodles
 7. Add "noodles" to stove top and mix with vegtables
8. Add romano cheese and add salt and pepper
 9. Place in a casserole dish, cover with shredded mozzarella and bake for 15 minutes or until cheese is golden
