Weeknight Meals

 
This week with so much family in town, we really fell off the wagon. If I take the time to meal plan and grocery shop though, I can at least guarantee our week day meals to be healthy and low carb....and life is all about balance anyways, right? 

 
 

This was Joel's favorite of the week - and the recipe makes quite a bit.

 


 Tuesday - Garlic Paprika Chicken Drumsticks with Broccoli and Cheese 

I honestly think this was the first time I've ever cooked chicken drumsticks, and I have no idea why I've waited so long. Not only were they cheap (and organic), but they were easy and delicious. The above, linked recipe is fool proof - so since I had some extra time, I made a cheese sauce for our broccoli which didn't disappoint. 
I also have a lot of fun feeding Leo what we eat for dinner. Most everything I use a scissors to cut into bite sizes and he does a pretty solid job of feeding himself. A lot ends up on the floor (or in Roscoe's mouth), but he's a pretty good eater. 


Wednesday - Lettuce Turkey Tacos 

 
No recipe used here, just simple, easy, and delicious. 

Thursday and Friday - We were out and eating a lot of delicious pizza! 

Saturday - Grilled Chicken and Sweet Potato Fries

We both felt like we needed a pretty light Saturday night dinner, and this fit the bill and still tasted good. Our secret to grilled chicken is all in thanks to The Spice House in Chicago. They have the BEST spice blends in the world...and it makes a great gift too!
